1 box white (golden) raisins
2 3/4 cups flour…sift after measuring 1 heaping teaspoon of baking powder 1 egg 1/4 teaspoon salt 1 cup of sugar 1/2 cup of oil
1/8 pound of margarine
about 3/4 to 1 cup of lukewarm water 1 pound chopped almonds (or walnuts) 2 teaspoons of cinnamon 4 tablespoons of sugar
2 ounces of your favorite jam, or combinations to suit your taste (raspberry, strawberry…but not blueberry, as it dominates the taste)
Pre-heat the oven to 400 degrees.
Mix the seven ingredients listed after the raisins. Work mixture with hands adding the lukewarm water a little at a time until the dough is easy to handle. Divide into five balls. Sift enough flour on board and knead flour into each ball, until dough is no longer sticky. Roll out dough on floured board, turning over occasionally adding flour to board as necessary. Roll out as thin as possible, lifting and turning on rolling pin.
Combine cinnamon and sugar. Sprinkle a handful of oil over surface of each circle rolled out; sprinkle with cinnamon sugar mixture. Spread two ounces of jam, keeping 1/2 inch from edge of circle. Sprinkle raisins, and chopped nuts.
Roll-up like a jelly roll. Put rolls in well-oiled baking pan; turn to coat… sprinkle with nuts. Cut slices 3/4 way through rolls. Bake until brown …30 to 40 minutes (30 minutes will probably be enough…don’t over do it!).
HELPFUL HINTS: add extra flour, if necessary, while rolling; warm water makes dough elastic; rolled dough should be ALMOST transparent; keep dough covered to prevent drying.
